Default Extract Plain Text from PDF

I've been looking at utilities that can extract plain text from PDF. I was very happy to see that all the ones I've looked at know how to preserve columns by padding with spaces.

I could keep looking around more, and I probably will. But I am wondering if anyone here has a favorite tool for extracting plain text from a PDF.
