Default iPod problems

I am running Windows XP. I have an iPod classic that was given to me. My Windows Explorer and Media Monkey used to see it. But now they don't.

So I installed iTunes and I can't figure out how to use it. It insists on looking in folders where I don't want it to look. It lets me add files to my library, but not remove them. What I'd like to do is set up one folder that it syncs to, but I don't see how.

But, if I could bypass iTunes and use something more sensible that would be better.

Any tips or referrals to iPod forums for Windows would be great.
