Default Food animal welfare

A friend sent me this link showing how UK supermarkets are doing with regard to welfare for food animals:

All very good and sensible. Somewhere in the article it says ""The Soil Association Organic Standard provides the highest welfare standards in the UK e.g.: prohibiting live export of male dairy calves." Eh? Male dairy calves? Dairy calves I understand: they say moo, grass goes in at one end, poo out the other, and in between they have udders which make our gold top. Now, I'm the first to admit that I'm not the brainiest chap in Ealing, but please, someone: how on earth can a male, er, be a dairy calf?!
