Default Setting up e-mail (more)

A few weeks ago, we had a discussion of Thunderbird in which we read about “bouncing” e-mail.

I confess that I skimmed it because the bounce term was unfamiliar to me. I further confess to ignorance about e-mail. But now I am setting up a new e-mail account and would like to try to do something sensible.

I see these options for the Default Address:
  1. Forward all mail with nonexistent recipient to a specific address
  2. Discard that mail, with “error [message] to sender (at SMTP time)”
  3. Simply discard (not recommended)
Is option 2 (to discard with an error message) bouncing?
If so, how should I set this up? Forward all incoming mail to my address (or a special one), and rely on SpamAssassin to filter most of the spam?

An aside: SpamAssassin is set to auto-delete spam. Is that a good idea? I could have spam sent to a Spam Box, which I would have to empty manually. I am tempted to do that, at least until I see what SpamAssassin does. Any advice here? (This is not a main e-mail address — just want it so people reading this site have a way to reach me if need be.)
