Default CSS & empty table cell

Okay, following in Kathleen's footsteps, I'm trying to convert a very complex table to CSS. I'm almost there... but not quite. Online at:
http://pamunkeybakers.com/tabletest.htm
What I can't figure out is how to control the width of the left most table cell, which is empty in the first real row. The kludgy workaround I came up with is to enter a whole bunch of non-breaking spaces to the cell, to force it to the width I want.

It seems to me there has to be an easier way -- but I can't find it. Can someone point me in the right direction?
