I should have provided more information - it would have saved you some typing.

If you plan on printing remotely, you will almost certainly need to make a PDF of your output. No shame in that; that is how most InDesign and QuarkXPress pages are output these days. But you might need to buy Acrobat Pro to have good control over the PDFs if you are sending them to the printer.
We produce an 8pp financial newsletter with a print-run of thousands, so yes, we have always printed remotely from PDFs. I see that the new OS (new to me) has a print-as-PDF function, so that'll save investing in another Acrobat license.

I've been here for 13 years and believe it or not, our publication has been produced on ClarisWorksDraw up until now. (ClarisWorks later became AppleWorks.) I need a new lightweight DTP application and it looks like iWorks 08's PAGES will be ok, having now seen some of their templates on various websites.

You have pretty good control over text formatting, but none at all over what typographers call H&Js (hyphenation & justification) which give you the ability to fine-tune to compensate for a poorly spaced font (or one used at a size it was not designed for). There is a dangerous little tool Apple calls tracking which increases or reduces letter-spacing by percentage (of what is not precisely clear, as there are no spaces between letters — I assume it adds space or shoves letters closer together).
Oh yes, H&J, haven't seen or used that for years! We don't like hyphenated line endings so it's not been an issue. I do, however now that you remind me, remember constant H&J worries in my previous job on a National daily newspaper.
