Default Dedicated virtual server: when/why?

I have 6 small web sites on three different hosts. A friend has a similar collection. We were wondering if (when?) it makes sense to have a dedicated server. Between us we probably spend about $100/month on hosts we are not particularly happy with.

It would be great to avoid suffering from problems of strangers, such as a DOS attack that brings an entire shared server down.

We have looked around and find the usual bewildering collection of offerings, at drastically different price points. We would probably want some sort of management support as we don’t know enough (or have time enough) to run a server on our own.

Anyone have any pointers? Or warnings against doing this? Or other advice?
