Copy and paste...

To select text, I touch and hold with my left thumb to get the select options. Then I touch which Select option I want, which gives me the copy option. Then I go to wherever I want to paste, touch again, and touch the Paste.

To select a single word, double-touch it.

Play with these options a bit and you'll develop your own technique.

This is on my iPhone 3G.
