I just make do with the laptop screen. Most of my work is typesetting novels so I can view a double-page spread quite happily and have room for the palettes in inDesign.

My palettes are arranged so that only one is open at any one time - as soon as I open one any other that is open collapses to the side of the screen. I suspect that's a default as I can't remember setting it up that way.
