Apple doesn't make a 21" display anymore. Just the 30" and a 24" LED--or is that what you meant?

Do you really need a laptop? I've been seriously considering a 24" iMac for my next "workhorse" computer (though I'm still perfectly happy with my 15" MBPro--"old Intel"), even for taking with me in the field. If I could find or make a box big enough to transport it safely in my truck, I think I would go for it. When I'm at work in the field, the computer just sits on the desk plugged into AC power all the time, anyway. The battery is more of a nuisance than anything else (i.e. keeping it "calibrated" and in shape, so it doesn't go flat after a year, like my last one did).

I do my InDesign work with the 15" MBPro screen and an external 15" VGA monitor--this is about the smallest setup I would want to use; it's just barely tolerable (most people would probably find it intolerable), and a bigger screen would definitely be nice.
