Default Font encoding issues

I am trying to work on a a web page with a friend. He is using DW (somewhat older version) on a Mac. I am using DW CS3.

I sent him a file that rendered just fine. When he returned it, a number of characters do not display correctly -- directional quotes, ellipses, etc.

When I look at the html in a hex editor, I see, for example, 0x85 for ellipsis (equivalent of alt-133). When I enter that code into DW, the DW editor shows it as a single character (…), but hex editing the resulting html shows three characters (0xe280a6).

Two questions: why does that three byte sequence work at all.

Is there some way to force DW to use the & codes (…) for such glyphs?
