Default Help with Acrobat 9.x

One of my employers moved everyone around in the office. This is generally not a problem as I only work there once a week usually. The good thing is I got one of the new computers. The bad thing (for me) is that I have now been upgraded from Acrobat 5.x to Acrobat 9.x, and things look completely different.

I'm supposed to re-do several PDF forms that the users fill out onscreen then print when completed. These forms started out as Acrobat 5 forms and now I'm tweaking them in 9. One of the tools I used frequently was the "FreeText Tool" which seems to have disappeared, and doesn't even appear in the Help. What is the equivalent tool to use in Version 9? I can't seem to find anything similar.

I'm sure there's someone here who's used both versions.
