Not so sure of the Mac stuff, but generally the major update packages include all the previous updates. IOW, if there's a Service Pack 3 available, you can grab it and forget about all the previous SPs and hotfixes and updates and whatnots, 'cause they're already included.

And FWIW, wherever possible, I download the SPs and store them on DVD or a network drive rather than letting them install over the net. Then if I need to install the same patches again, they're there. I don't have to hunt them down and wait for them to d/l.

Adobe makes this difficult (if not impossible). Very little of their stuff finds a home on my system any longer.
