If you aren't going to heavily stream stuff (as in video editing or something of that order) you'll find the 3rd USB portion the iMac more than suitable for your disk needs.

I have a gaggle of USB disks for my iTunes related storage and they feed my computer and AppleTVs just fine.

Firewire 800 would be faster but it's speed will likely go unused (especially in the context of a single drive where the disk itself will be the limiting factor).
