The most powerful one, I believe, and what I use, is Phil Harvey's ExifTool.

It's a Perl program, so it'll run on any machine that has Perl installed. (But for Windows and Mac there are even a stand-alone executables that don't require Perl!) Not for those who are afraid of the command line, but it will find and allow to edit a lot of information other tools don't even see.

The page also lists a whole bunch of related tools.
