Look at Chicken of the VNC. It is an open source (i.e., free) utility, described this way:
Chicken of the VNC is a fast, lightweight VNC client for Mac OS X. A VNC client allows one to display and interact with a remote computer screen. In other words, you can use Chicken of the VNC to interact with a remote computer as though it's right next to you.
I find it a tad annoying — it isn’t speedy. But it does let you look through old folders and files right on your new desktop, de-activate Adobe apps, and so on. You cannot copy directly from it, however.

You can also use your network to set up copies of the old folders on the new Mac. Then all you need to do it drag/copy into the new hard drive. (Unfortunately, I found many volumes did not copy — including the old boot drive. I think I know why; will be working on that today.)
