Default Problem w/PDF for printing

I've been using ScanSoft PDF Create! v. 3 to create PDF docs, and just recently tried to convert an MS-Publisher 2003 file to a PDF to send to a printer. Unfortunately, PDF Create! can't set color as CMYK instead of RGB, so, no printing.

I've researched Adobe's Web site for Acrobat, but nothing tells me if this program can put CMYK color in a PDF for printing. Can someone tell me if Acrobat can do this? Or, if not, what other program could I use?
